We love Chinese food. Unfortunately, where we live there aren't a lot of choices. And
Chinese food, although not difficult to make, requires a lot of prep time. Dicing and slicing not to say all the spices you need to have to put together something delicious. Well, I found this recipe and not only is it delicious, its easy! Sesame Broccoli Beef Stir fry! I think it's just as good as you get in a restaurant. maybe even better!
The key to this is searing the beef. And for that I use my cast iron skillet. In order to get the browning without overcooking, you’re going to have to work with a very very very hot pan. I used a cast iron skillet for this which worked really well. The beef needs to be cut thin and seared on both sides. I cannot stress how important this is. You do not want the meat to simmer or steam – you want it BROWNED, so if the meat is a little wet, pat dry with paper towels before searing.

Equipment
Ingredients
1 lb. beef flank steak, thinly sliced
1 head broccoli, cut into florets
2 tablespoons vegetable oil
3 cloves garlic, thinly sliced or minced
one 1-inch knob fresh peeled ginger, grated or sliced
thinly sliced green onions for serving
The Sauce:
1/4 cup low sodium soy sauce
1/4 cup water
1/3 cup brown sugar
1 tablespoon sambal oelek (hot sauce or Sriracha can be used.
1 tablespoon rice vinegar (sub white vinegar)
1 tablespoon sesame oil
1 tablespoon cornstarch
Beef Prep: Freeze beef for 30 minutes – 1 hour for easier slicing. Slice against the grain, into very thin strips. (If your flank steak was frozen, defrost, to the point you that you can make very thin slices. My slices are almost paper thin)
Sauce: Whisk the sauce ingredients together and put aside,
Stir Fry Time: Heat a large heavy skillet over medium heat. Add a swish of oil. Working in batches, add the beef in a single layer. Let rest, undisturbed, for a minute or two to achieve a nice browning on the meat. Flip each piece over and cook until browned and yummy. Remove beef from pan. I cannot tell you how important this step is. The pan needs to super-hot for searing. And if you are using cast iron, remember to use a potholder to grab the handle
Broccoli: Add a swish of oil to the same pan. Add the broccoli; stir fry for 2-3 minutes, until bright green. (Sometimes I add a splash of water to steam it a little bit.) Remove broccoli from pan.
Finally: Turn the heat down and let the pan cool a bit. Add one last swish of oil. Add the ginger and garlic; sauté for 1-2 minutes. Add the sauce; stir until a thickened and sticky sauce forms. Add beef and broccoli back in. Toss gently to coat. Garnish with toasted sesame seeds.
There you have it. Serve with white rice, brown rice or Margies rice.
